Cheeseburger soup has become a regular meal in our home. The kiddos aren’t always excited about, but it is easy and we LOVE the leftovers!

Recipe for Cheeseburger Soup

Ingredients

  • 1 lb ground beef
  • 1 cup diced carrots
  • 1 tablespoon minced onion (or 1/2 cup finely chopped onion so husband doesn’t notice)
  • 1 cup elbow macaroni
  • 1/2 teaspoon each of basil, parsley, and oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 cups chicken broth/stock
  • 1 cup heavy cream
  • 2 cups shredded colby jack cheese

Instructions

  1. Brown the ground beef and drain fat.
  2. Add the minced onion and carrot to the cooked ground beef and cook for 5 minutes on medium heat.
  3. Add the seasonings, macaroni, and the chicken broth and bring to a boil.
  4. Reduce heat, cover, and simmer for 8-10 minutes or until the pasta is cooked.
  5. Add the heavy cream and cheese and stir until melted.
  6. Dish up and serve with a dollop of shredded cheddar or colby jack on top. Yum!
