I came across a few different versions of this recipe when my older son was starting to eat solids and he absolutely loves these pancakes! They may sound a bit weird or even gross, but they are surprisingly tasty and so easy to make! Occasionally I will even add a touch of cinnamon to the batter before frying.

Ingredients
- 1 banana
- 2 eggs
- Butter for frying
- Optional: Cinnamon if you are fancy

Step 1: Crack the eggs into a bowl and mix.
Step 2: Smoosh banana and mix into the eggs until big lumps are gone. (Add cinnamon to taste if you are using it.)

Step 3: Heat your griddle or frying pan to about medium heat and melt some butter.
Step 4: Use a tablespoon to scoop and pour banana pancake batter onto pan.

Step 5: After about 1-2 minutes (or browned on bottom), flip pancakes and cook for 1-2 minutes or until cooked. Add extra butter if needed.

Step 6: Serve! I cut the pancakes up for the toddler, but they are the perfect size for the 4-year-old.
We usually have about 5-7 leftover pancakes that keep in the fridge for a day and make a nice snack (or even breakfast the next day).
